Roasted Butternut squash
1 Medium butternut squash, peeled and cubed.
2 Small onions, sliced
5 Cloves garlic, minced finely
2 Cups mushrooms, sliced
1/4 Cup olive oil
Combine all veggies on a large roasting pan, drizzle with olive oil, add salt/pepper to taste.
Roast in 400 (F) oven for 15-20 minutes or until veggies are caramelized, turning with spatula once or twice.
