This recipe is originally from http://stellastyle.com. I only have two minor tweaks…I don’t add any salt since the cheese seems to make it salty enough, and I hold back 3/4 cup of cheese for the topping.
Cauliflower Mac and Cheese
1 large head cauliflower, cut into small florets
3/4 cup heavy cream
2 ounces cream cheese, cut into small pieces
1 1/2 teaspoons Dijon mustard
2 cups grated Cheddar cheese
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
Cook the cut cauliflower in boiling water for 5 minutes. Drain well and let sit on a dry towel on the counter while making the sauce.
Bring cream to a simmer, add cream cheese and mustard, whisking until smooth.
Stir in 1 1/4 cups of cheese, salt, pepper, and garlic powder, and whisk just until the cheese melts. Transfer cauliflower into an 8×8 pan, and pour sauce over the cauliflower. Stir so it’s all coated.
Top with the remaining cheese. Bake at 375 F until browned and bubbly hot (about 15 minutes).
I dont know about a kid eating this but this sure looks amazing!
The kiddo was bummed when I stopped buying Costco packs of Kraft…This takes a wee bit more time to cook, but is far more delicious !

This looks delicious! My six-year-old daughter will definitely love it. Your blog is great. I’m always happy to find a fellow “low-carber,” and will definitely check out your recipes as often as I can. Years ago, in my pre-mom life, in which I was very athletic, I discovered low-carb living, and how much strength it gave me. Now (after falling off the wagon during my pregnancy and for the ensuing 7 years! Oops!) I’m even moving to Paleo eating, and doing the GAPS diet for a while with my type 1 diabetic daughter, and feel great! Keep up the good work! Can’t wait to try this “mac n’ cheese…”
Thanks so much! Diabetes is SO tough on kiddos (especially at school where b-days/holidays abound), and I would imagine it’s extra tough on parents. Hope she likes the recipe. I am off to go research what the GAPS diet is now 😎

I make a recipe just like this but I add in bacon and green onions. Turns out just like a delicious loaded baked potato, but without the carbs. Yummmy! Here’s the recipe if you ever want to try it. 🙂

I had leftovers from this as well as some extra caramelized onions left over from another dish. I put the the onions on top of this along with a slice of ham, and it was AMAZEBALLS! Seriously good.
