Shrimp Caprese

Super quick and easy 10 minute meal, using tomato and basil fresh from the garden!

Shrimp Caprese
20 medium shrimp (pre-cooked)
1 Tbsp butter
1 medium tomato, diced
5 fresh basil leaves, thinly sliced
Salt, Pepper and garlic powder to taste

Melt butter over medium high heat. Add shrimp and sautee until a nice and brown.  Add salt (I use Kosher), pepper and garlic powder to taste.

Add tomatoes and basil.

Caprese Salad.

This is one of my late summer go-to sides.  Fresh tomato and basil from the garden will amplify the flavor.   Slice the tomatoes, add fresh mozarella medallions, drizzle with olive oil.  Add thinly sliced basil.  Sprinkle with Kosher salt and cracked black pepper.

Prep = 3 minutes !

Low Carb AppetizersEASY Low carb appetizer

Kids love assembling this one, so I recommend arriving at the party with your supplies and getting a few helpers engaged !

1 can large olives
1 container grape tomatoes
1 container fresh mozarella cheese balls (15 oz.)
Dried Basil (fresh would be a great addition)
Extra Virgin olive oil
Toothpicks

Assemble the appetizer, making sure the cheese ball is in the center and arrange on plate.  Drizzle with olive oil, and sprinkle lightly with dried basil.

These can be made a day in advance, just drizzle a little more olive oil to freshen them up before serving.

 

Emeals Review: Chicken Caprese with Dijon Broccoli February 10, 2013

Ingredients: Main dish – bacon (I used beef bacon), chicken breast, olive oil, tomatoes, basil leaves, sliced mozzarella cheese.  Side dish – broccoli, oil and vinegar salad dressing, Dijon mustard, green onions.

Embellishments: I added a little bit of lemon juice to the dressing for the broccoli.

Prep: Medium. 15 minutes.

Cook time: 30 min.

Comments:  The chicken was AWESOMELY delicious, not too hard to prep, and the family loved it. For the side dish we prefer our broccoli nearly naked….usually just a little butter and garlic on it.  The dijon dressing was so-so.  Not bad….not good.  Overall this dish gets a thumbs up from both me and the family.
