Emeals Review: Beef Stroganoff with Spaghetti Squash February 10, 2013

Ingredients:  Ground beef, onion, garlic, beef broth, red wine, sour cream.

Embellishments: Added an extra onion, 1 lb. mushrooms, 1 red bell pepper, heavy cream, cornstarch to thicken, nutmeg, fresh parsley for garnis.  Eliminated the spaghetti squash and substituted Shirataki noodles instead.

Prep: Easy, maybe 15 minutes of dicing, etc.

Cook time:  30 minutes

Comments:  The embellishments were pretty severe for this dish.  First of all, the original recipe didn’t call for any mushrooms !  WHAT ?  Secondly it called for an entire cup of red wine….I felt that would overpower any of the flavors of the food itself, so reduced that a bit and compensated by adding more beef broth.  The side dish was spaghetti squash which I don’t care for, so instead added one package of Tofu based Shirataki noodles to the stroganoff towards the end of the cooking, and served with broccoli instead.  Note that the recipe “as is” from Emeals was totally unremarkable.  The addition of 1/4 cup heavy cream and nutmeg at the end was my attempt at trying to create a more “rich” flavor.  I also needed cornstarch to thicken the dish at the end since 1.5 cups of liquid was far too much.  Thumbs down.

Szechuan Stir Fry with Shirataki Noodles
1 lb. beef (mine was top round, but any steak variety will do)
2 8oz. packages Shirataki noodles, rinsed
6 oz. prepared Spicy Szechuan sauce
1 large bunch broccoli florets
1/2 cup slivered almonds, toasted
5 oz. mushrooms, sliced
3 small tomatoes, diced
2 small zucchinis, diced large
2 small red bell peppers sliced
1 large onion, sliced
2 large celery stalks, sliced
5 cloves garlic minced

– Sautee onion and celery in a bit of oil on med-high heat. When cooked, remove from pan to plate.
– Sautee broccoli, mushrooms, bell peppers, garlic in small amount of oil.  When cooked remove to plate.
– Cook the meat with a little salt, add the zucchinis when meat is nearly done.
– Add all veggies back into pan.
– Add noodles to pan, along with Szechuan sauce and mix until they are heated through.  Remove from heat, Add tomatoes, and almonds, and serve.

Shirataki with Pesto and Tomatoes – Terrifically low carb… October 12, 2012

Shirataki with pesto and tomatoesThere is a tofu based product called “Shirataki”.  It is an incredible substitute for pasta, and in my opinion FAR superior to spaghetti squash (the texture of squash just doesn’t cut it for me).

The trick to Shirataki is to not be put off by the smell when you open the package….there is a fishy-ness to it.  Just dump it into a strainer and rinse immediately which takes care of it.

Prep time for this meal is about 2 minutes, which makes it a fabulous lunch when you are totally famished.  AND, the Shirataki has a pretty long shelf life, so when it comes on sale you can stock up.  Besides being low carb, the noodles are also low calorie when compared to pasta.  Only 20 per serving !

Shirataki with Pesto and Tomatoes

1 Serving Shirataki (4 oz)
1 Medium Tomato
1 Tbsp. Pesto

Rinse Shirataki noodles in a strainer.  Dump into a bowl, add 1 Tbsp. Pesto, and microwave for 30-60 seconds.  Add Tomatoes and mix together.
